Let’s not beat around the bush, the weather is crepe! It’s dark in the mornings, cold in the evenings and I have permanently wet feet. Without the twinkly lights of Christmas, this time of year can seem a little bleak. BUT… we don’t have to be bleak! (We don’t??)
Take the first few weeks of the new year to work out what you want to achieve this year. Not in a work sense, but in a life sense. What would you need to do to get to December 2014 and think ‘my god what an incredible year’? Whatever it is, do that.
Naturally all this thinking during the dark mornings or cold evenings is going to require some energy so we’ve got the perfect winter warmer breakfast. If you’re in a rush, you could even microwave your porridge. Can’t get speedier than that. Unless you skip breakfast. Which we all know is the single track road to eternal doom.
Until last week I had never had porridge oat pancakes and wrongly thought they would taint the holy sanctity of breakfast by being too wet or too bland. But no. Surprise surprise I was wrong again.
I ended up with a salty/sweet pancake which was too good to share (hence the recipe is for one if you’re me, or two if you’re a generous human being). For savoury heaven, melt some salted butter on top, or for a sweet breakfast top with berries, syrup, cinnamon or icing sugar.
