Each New Year we resolve to make ourselves better – better wives, better mothers, better workers, better cooks. God it’s exhausting! Why we think we can take on any extra good habits after burning the candle at both ends over the holidays to put on a magical Christmas each year is beyond me.
Yet somehow the beginning of January brings with it renewed enthusiasm for our lives and the possibilities of making them more exciting – learning a new language, travelling to a foreign land, taking a dance class. And I can’t lie, drawing up a list of resolutions today did have me bubbling with positivity.
I want to ride an elephant this year. And run a marathon. And volunteer at a food bank. And cook a roast dinner. There’s just something so enticing about the unknown, yet we normally approach it with such caution. Why do we feel like we can achieve anything at this time of year? And how do we keep it going all year?
So this, year my resolution isn’t something you can tick off a list. It’s more a way of thinking. My resolution is to enjoy the adventure into the unknown of 2014 – it’s about taking opportunities to try new things, and enjoying the ride. 2014 will be a year of change. So what does that mean for the Little Pancake kitchen? Well we’ll be experimenting with new recipes as always but we wanted to take on an extra special pancake challenge. The crepe cake. The most beautiful pancake invention we’ve never tried.
