A Taste of the Caribbean

Happy Bank Holiday Little Pancakers! We have been busy in the kitchen experimenting with a very special recipe today, and it is one that is sure to top off your sunny long weekend perfectly – Rum and Coconut pancakes! Think sun, sea, sand – pineapple and a nice cold drink. The whole shebang!

This recipe uses Malibu rum in the batter and we’ve whipped up a little Malibu syrup to go with it. The coconut flavour comes from desiccated coconut added to the batter. You could always use coconut milk too for an extra kick.

Diced pineapple is the perfect accompaniment – you could even fry pineapple rings in this batter if you were that keen. I might have to try that actually now that I’ve just thought of it!
