The Dutch Sure Know How to Pancake…

I spent 3 days in Rotterdam last week. The highlight? Not the giant sculpture of the tennis racket. Not the giant sculpture of the tulips. It was the pancakes! Sadly no giant sculpture involved…

A Dutch chef prepared a plate of poffertjes for each of us – who knew a pancake so little could be so full of magic! Poffertjes are a real Dutch tradition – they’re small fluffy pancakes which are cooked in a cast-iron pan with small round indentations for the batter to cook in.

No fancy toppings, just a dusting of icing sugar. Absolutely delicious.
