Today is pancake day. In our eyes, the BEST day of the year. Better than Christmas, better than birthdays. Better even than the longest day of the year. But what makes it so great, the sceptics ask? I can have pancakes any day I want, they argue. Of course you can, but you don’t! We can have birthday cake any day we want, and we can have roast turkey with Yorkshire puddings and gravy any day we want. But we don’t! That, my friends, is the point. The very beauty of pancake day is that we eat pancakes on this day.
We love a good ol’ bit of tradition so we made pancakes this evening using a sweetened batter.
1. Mix the flour, salt and sugar in a large bowl.
2. Make a well in the centre and crack the 3 eggs in
3. Whisk the eggs into the flour, slowly adding the milk and melted butter or oil.
4. Cook over a high heat in a greased pan, flipping the pancake once the underside is lightly coloured.
We filled ours with raspberries and squirty cream… Oh and some Nutella… and some strawberry cheesecake ice cream… A bit of everything really!
