Vanilla Cream. Beautifully speckled with the seeds from a vanilla pod, this topping says ‘simplicity makes me happy’. Every pancake needs a topping – even if just a simple vanilla cream. The perfect partner for our Apple Crumble Pancakes.
300ml Double Cream
1 Vanilla Pod
2-3 tbsp of Icing Sugar
Whip the double cream in a large bowl with a metal whisk until it is thick but can still be poured.
Slice down the length of the vanilla bean and scrape the seeds into the cream. Don't discard the vanilla bean as you can use it again - pop it in to your porridge or rice pudding as it cooks for a lovely vanilla flavour.
Add the sugar and fold the cream to ensure the sugar and vanilla seeds are combined. Add more sugar to taste depending on how much of a sweet tooth you have.
