Luscious Lemon Cream

Lemon cream. This topping says ‘I’m short of time but I’m not short of culinary flare!’. The perfect topping for jazzing up crepes on pancake day.

Ingredients

  • 150ml Whipping Cream
  • Juice and Zest of 1/2 a Lemon
  • 2 tbsp of Sugar

Method

  1. Whip the whipping cream in a large bowl with a metal whisk until it is still enough to be spooned onto pancakes.
  2. Fold in the sugar, lemon zest and lemon juice.
  3. Add more lemon juice or sugar to taste depending on how sweet you want it to be.
