Eggnog Pancakes

Eggnog Pancakes. These pancakes say ‘it’s never too late to start a new Christmas tradition’ and for us this year that tradition is Christmas Eve pancakes. We’ve used advocaat, which is very similar to eggnog, and is made from eggs, sugar and brandy. This is the perfect pancake to make once the presents are wrapped, the tree is decorated, and all that’s left is to enjoy the company of friends and family.

Ingredients

Serves 4

  • 165g Plain Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • Generous Pinch of Ground Nutmeg
  • 1 Egg
  • 300ml Eggnog or Advocaat
  • 1 tbsp Melted Butter
  • 1-2 tbsp Milk

Method

Whisk up your Batter
  1. Put the flour in a large bowl with the baking powder and nutmeg. If you're using unsalted butter then add 1/2 tsp of salt. If you're using salted butter, you shouldn't need to add any extra salt.
  2. Make a well in the centre and add in your egg, eggnog (or advocaat), melted butter and milk.
  3. Tip: If you melt your butter in your pancake pan, rather than in the microwave, then you won't need to grease your pan when it comes to cooking your pancakes.
  4. Whisk the mixture together until you have a smooth batter.
Cooking your Pancakes
  1. Heat a little butter in a frying pan over a medium-high heat (if you melted your butter in your pancake pan then go ahead and skip this step).
  2. Add about a tablespoon of batter per pancake to your pan and smooth into neat cirlces with the back of a spoon. If your batter is dificult to spoon out then add 1-2 tbsp of milk to loosen the mixture.
  3. Cook the underside of the pancakes for a few minutes until bubbling on top and golden brown underneath.
  4. Flip the pancakes and cook the other side until golden brown.
Top Tip
