We always love a bit of forraging and with blackberries in the hedgerows, why not use them to make a delicious pancake topping.
Ingredients:
2 tablespoons sugar
1 teaspoon lemon juice
Method:
Step 1
Blend blackberries, sugar, and lemon juice together in the bowl of a small food processor. Mix until the mixture is smooth and the sugar has dissolved. This should take approx. 15 to 20 seconds. Adjust sugar if necessary, and blend again.
Step 2
Strain mixture using a sieve to remove any seeds. Taste and add more sugar if necessary. Refrigerate until you’re ready to use the coulis.
