Vanilla Cream. Beautifully speckled with the seeds from a vanilla pod, this topping says ‘simplicity makes me happy’. Every pancake needs a topping – even if just a simple vanilla cream. The perfect partner for our Apple Crumble Pancakes.
- 300ml Double Cream
- 1 Vanilla Pod
- 2-3 tbsp of Icing Sugar
- Whip the double cream in a large bowl with a metal whisk until it is thick but can still be poured.
- Slice down the length of the vanilla bean and scrape the seeds into the cream. Don’t discard the vanilla bean as you can use it again – pop it in to your porridge or rice pudding as it cooks for a lovely vanilla flavour.
- Add the sugar and fold the cream to ensure the sugar and vanilla seeds are combined. Add more sugar to taste depending on how much of a sweet tooth you have.
